Hyderabad: With mango season upon us, we have some recipes for those following a plant-based diet.
This summer, Chef Varun Sharma, founder of Bodhi Trees and Consulting Chef at Humane Society International/India curates recipes that go beyond mango ice cream or other desserts, experimenting with the ingredient with savory and plant-based flavours! Here are two of his recipes you can try at home:

Mango Ginger Soup
raw material:
2 large mango purees
1 small chopped onion
2 teaspoons ginger paste
1 tsp salt
1/4 teaspoon ground black pepper
2 chopped green chilies
Method: |
Add all ingredients in a blender and blend until smooth, pour into a bowl and garnish with scallions and mango chunks.
Mango Green Smoothie Bowl
raw material:
1 large mango pulp
6 dates
2 tablespoons ground flaxseed
1 inch ginger
juice of 2 limes
2 cups mixed vegetables
1/4 cup fresh mint leaves
1 cup ice cubes
method:
Add all ingredients to a blender along with mixed vegetables including spinach, arugula leaves, and radish greens. Blend all ingredients together until smooth, then pour into a bowl. Garnish with fresh mango, crunchy granola and mixed nuts and seeds.
