Hyderabad: Over the years of colonial rule and the influence of other countries, Sri Lanka has incorporated its food culture into different curry mixtures and delicacies.
Novotel Hyderabad Convention Centre will be hosting the Sri Lankan Food Festival in collaboration with Food Exchange Chef Anura Lenora until 13 November.
Chef Anura from the island nation is ready to cast his culinary magic on guests during the 10-day festival, while showcasing the island’s truly rustic and authentic flavours.
Sri Lankan cuisine is one of the most diverse, incorporating authentic flavours and aromas. This dish has a long history, combining different curry seasonings, seafood and many delicious dishes made with authentic spices.
The cuisine derives from a strong local culture and colonial influences from Portugal, the Netherlands and the United Kingdom who came to Sri Lanka for its famous spices and teas. South Indian and Malay traders also had an influence on Sri Lankan food.
The chefs at Novotel came up with the idea of hosting this food exchange to soothe our taste buds with flavour-filled food.
“We are delighted to host the Sri Lankan Food Festival and explore the intricate cuisine from our neighbouring country. Sri Lankan food expert Anura Lenora has worked with our team of chefs to craft the menu, which includes a contemporary Traditional dishes, designed to revive recipes that may have passed over time,” said Manish Dayya, General Manager, Novotel-HICC.
The food extravaganza will offer a wide variety of exotic Sri Lankan delicacies including vegetarian and non-vegetarian dishes such as “Morunga Maluwa”, “Alanibithi Curry”, “Elawalu Cutlet”, “Kukul Mas Roti” and many more.
Special sweet treats such as “Sago Thalapa” (sago pudding), “Kiri Topi”, “Pol Dosi” (coconut sweet) and “Carota Kavum” (carrot cake) will also be served during the festival.
